Back in the Groove
Okay, so I realize I haven't really blogged on here in a while, so sorry about that! We have been super duper busy moving. Now that we are getting settled in, I am hoping to get back in the groove of blogging. Altough probably a total of one person reads this...me lol. Anyway, I will get better at sharing things from our lives as well as fun things that I come across. Until next time.

Happy 6 Months
Happy 6 months to me and my wonderful husband! The past 6 months has gone by so fast and have been so fantastic, and I can't wait for the next 150 years with the most awesome man God has blessed me with.

Happy Memorial Day!
Happy Memorial Day! We are so grateful to each and every person who has served in the military and protected us and our freedom! We are forever indebted. Thank you for your selflessness and sacrifice, God bless all of you!

Recipe Time!
Good Morning!
Okay, so those of you who know Tanner and I, you know how much we love to cook! So of course when we find a new delicious recipe, I must share it! We made this last night and it was awesome, and better it is healthy! Doesn't get any better than healthy and delicious! Hope you enjoy!
Skillet Lasagna
Okay, so those of you who know Tanner and I, you know how much we love to cook! So of course when we find a new delicious recipe, I must share it! We made this last night and it was awesome, and better it is healthy! Doesn't get any better than healthy and delicious! Hope you enjoy!
Skillet Lasagna
serves: 4-6
Ingredients:
- 1 1/2 tablespoons extra virgin olive oil
- 1 large onion, chopped
- 1 cup mushrooms, chopped
- 2 garlic cloves, minced
- 2 (14.5 oz) cans Italian diced tomatoes, drained
- 1/4 cup tomato sauce
- 3 basil leaves, chopped
- 1/4 teaspoon black pepper
- 1 teaspoon sea salt
- 1/2 cup skim ricotta cheese
- 1/2 cup part skim mozzarella cheese
- 3 tablespoons Parmesan cheese
- About 6 ounces lasagna noodles, broken into thirds & fully cooked
- 2 tablespoons parsley (dried or fresh)
Directions:
- Heat oil in a large nonstick skillet over medium-high heat. Add onions and cook until softened, about 4 minutes. Add garlic and mushrooms and cook until garlic is fragrant, about one minute. Add in diced tomatoes, tomato sauce, basil, salt and pepper. Cook mixture until it thickens up a bit, around 5 minutes.
- Add noodles to skillet and stir into the mixture well. Add scoops of ricotta cheese over the noodles; add in mozzarella and Parmesan. Stir in parsley. Cook about 2 more minutes, or until mixture is thick.
- Serve immediately with additional basil or parsley.

Congratulations!
This is a big Congratulations post to 2 special people. My aunt Julie Star and her boyfriend got engaged this past weekend! We are so happy for you and love you very much! Can't wait for the wedding!

Friday! It always seems to take forever to get here, but then the weekend flies by so fast, if only it could be the other way around! I wanted to share a song that has been a favorite of mine lately. It is great to know that when you have struggles in life, the Lord is right there with you. Please keep my family in your prayers, my aunt was just diagnosed with breast cancer.

Welcome to the Wild West
We are the Wests, welcome to our blog! I have always been one of those people who want to blog but can never keep up with it, well that is changing now (hopefully :) ).
